Gluten-Free Coconut Cupcake Recipe with Kate's Cupcakes!


Last week, Kate was sweet enough to come over to Elle's Kitchen to brew up a wonderful coconut cupcake concoction. This was the first time making gluten-free and so we changed up the recipe a little to make it work just tasty and right.

And we succeeded! Kate's making some sweet cupcakes here in the Stavanger, Norway area, and if you get a chance, and perhaps want to give her treats a go (you'll want to!) - check her out here!

I got my sweet Jessica Steele, French toile style apron in the mail and I am loving it! So, I thought I would showcase it in the post :D

Here is the recipe for gluten-free coconut cupcakes!

You'll need:
100 g butter
120 ml of gluten-free flour
1/2 tsp baking powder
1/2 vanilla extract (gluten-free)
100 ml of coconut milk
2 egg whites
Dry shredded coconut (adjust to what you desire)
2 bowls
1 mixer

Pre-heat oven to 175 C.

Take your butter and throw it into the bowl of sugar. Slowly start to beat the sugar and butter together while adding a little coconut and your gluten-free flour, a little bit at a time. Make sure you throw the baking powder into the flour before mixing this together.

Once it is all mixed and lovely, put the bowl aside.


Take the other bowl and add two egg whites, some sugar and vanilla extract, then whisk until it's dreamy and fluffy!

Mix this together with your other bowl of goodness and pour as much shredded coconut as your little hearts desire!

Place the mixture in cute coloured cupcake holders on a cupcake sheet, filling them a little more than half way in each, and place them into the oven for about 25 minutes.

These were very light and tasty. We hope you give these a try!

I Want a Cabbit for Christmas!


If only these cute cat/rabbit creatures existed! Aren't they the cutest, most precious, fake cabbit creations you've ever seen? :D

I am sure one day we can mess with genes and chromosomes and make test tube bunnies and such. Maybe animals will no longer become extinct. But unfortunately, people may lose respect for them ...

Who knows, but for now, I will love and enjoy these little guys in pictures, my dreams and make-believe :)

List of Best-Selling Albums Worldwide!



Usually things like this start with a debate and the classic Wikipedia look up, and that is exactly how it happened. It was so interesting to see the list of the top 40 most selling albums of all time.

Obviously the first being Michael Jacksons "Thriller" album, but did you know that Meat Loaf's "Bat out of Hell" is #3 and that Andrew Lloyd Webber's "Phantom of the Opera" (big fan!) sold as many albums as the Backstreet Boys "Millennium"? Why - even The BeeGee's "Saturday Night Fever" has sold around 40 million.

This list is interesting and quite surprising! Do you think you could list the most selling top 40 albums in the world (I'd give points just for naming one of them)? Check it out as this list is quite a read!

Someone is trying to be me!

I guess I can't put myself out there without somebody trying to spoil all the fun.

Seems someone has snatched some of my photos off MySpace and used them to set up accounts on social networking sites and such, trying to be me. Also - I've heard reports that a person using my photo as a profile picture has been contacting people on msn.

Anyways - if you do get contacted by such a person - report them (and please - tell me too).

There's a fake, not-up-to-the-original Elle out there, like a Chinese counterfeit trying to pass off as the real deal - tsss!

Still - no good.

Louis Vuitton City Guide 2010



Louis Vuitton has released a fabulous 2010 city guide box set that I would die to tour all of Europe with. Preferably; travelling in such company wearing a beautiful pair of LV boots (as long as I'm already dreaming)!

The book/box collection consists of 8 major city sets and one super box set of 9 books called "European cities". It makes me not want to open it - just have it out on display, it's that sexy.

This is probably the most expensive city guide you will ever purchase, but it is of a classic design that will look even more beautiful as it ages.

What made me check out Louis Vuitton was the gorgeous boots and shoes this French fashion house has in their 2009 Winter collection. In every magazine I opened (one magazine) - I wanted every pair.

They showcased more of the crazy couture styles I fell in love with, sporting leather frills and oozing sex appeal, a package that I reallllly wanted, but unfortunately couldn't find among all the styles on the website.

Vuitton has a lovely line this winter, I must say. I will probably never own a pair, but if I did - I would put it on display, as they are such wonderful art pieces in themselves.

Concerned Children's Advertisers: The House Hippo!


Does anyone remember the Canadian ad campaign from "Concerned Children's Advertisers"? Well, way back in the day they made the "House Hippo" and I remember seeing this commercial and actually begged my mother to find me a potbelly or teacup style hippopotamus for my own.

He can live off chips, raisins and crumbs from leftover peanut butter toast. If anything, this proved that dreams could come true, but one was left with the crushing truth of there being no such thing.

This commerical made me smile and brought on the late night laughs while they ran the commericals on YTV and laced throughout T.G.I.F shows.

Just took some time out within the 11th hour (Canadian time) to pay respects. This is the original poem written by Doctor John McCrae (born in Guelph, Ontario) while he witnessed the horrific battle in Ypres, Belgium and was inspired to write this piece.

It was scanned in and posted by the "The Canadian War Museum" in Ottawa, Canada that I hopefully can visit some time soon (I could honestly live at any museum - I love them that much, except if I had to stay there over night ... alone ... then it would be all sorts of scary :)

Lactose-Free Food Cream?!


Heck yes, folks! This is like the day hell froze over and the heavens rained lactose-free keylime pies from clouds of Crème Brûlée! Mmmmm ... I actually found lactose-free cream for cooking here in Norway!

This past weekend I was at my in-laws and they made wicked homemade Crème Brûlée. I've never had one so good since I was in Nice, France, this past spring. I haven't made it yet as I need to find some raw vanilla pieces to boil (yeah - it's that homemade!) but it seemed to be pretty easy.

I don't have a torch to crust the top like the recipe asks for, perhaps I'll just light the whole top of the pan on fire ... what an amazing show that would be! :D

Unfortunately I could only have a taste (let's not lie - I ate the whole thing) but it caused me lots of stomach pain and grief which is not that enjoyable in the end.

I am going to conduct this recipe and make a couple of lactose-free changes and see how it flies. I'll let you know how it goes in a couple of days, but for now, I am so thankful to have found lactose-free cream! :D

Snopes.com!


There are a lot of things that I question throughout the day; crazy stories, urban legends and rumours in everyday conversations makes me wonder whether things are true or false.

For instance, how did Santa Claus's red attire come to be (or was he just invented by Coca Cola)? Is there an albino moose roaming Canada? Can strategically placed onions ward off swine flu?

Snopes.com can answer all those questions that might come up, even if you don't like the answers. Sometimes it's just fun to browse the sites and realize all the urban myths you thought were true - weren't. I personally love the "random" button - for loads of juicy true stories or myths!

One of my favourite myths is that of James Dean's car - the Porsche Spyder named "Little Bastard". Legend holds, after James Dean crashed it and died in 1955, it was sold for parts - and kept on killing. Make of it what you will.

Another good one is whether the Mexicans used to pee into the Corona beer destined for the US. This was a huge story in the late 80s - and I still hear people mentioning it (and believing it) today! Better get your facts straight!

I like quick tidbits and this site is a go-to in this household when it comes down to debates and whatnot. Try out Snopes.com for fun! (or if you're just plain bored).
